The laying hens have free access to grass and clover pastures. They live in a 30 x 50 hoop house, where they lay their eggs and roost at night. The doors are closed each night to protect them from predators.

The hoop house, which is built on skids, is pulled across the pastures with tractors to keep the hens on fresh pasture. The hens are also fed a complete ration to provide the protein and energy needed to produce their eggs.

This system of egg production has been shown to produce eggs that are 34 percent lower in cholesterol, 10 percent lower in fat, contain 40 percent more Vitamin A and 400 percent more Omega-3 fatty acids than conventional eggs.
